Chili Tincture

handful of halved Thai Chillies with stems removed

1 bottle of white rum

Pack into a glass mason jar and store for 2 weeks

Strain with cheesecloth into a glass container

Store refrigerated

Spicy Nathan

½ oz Plymouth Gin

1 oz Light rum (banana or clove hints a plus)

1 oz lime

½ oz lemon

¼ oz strawberry shrub

¼ oz brown sugar syrup

½ oz ginger syrup

2 dashes of chili tincture

Shake all with ice and strain into a cocktail glass. Garnish: lemon swath
