Made a spicy chicken curry: -sauté onion, garlic and chilli in a little olive oil with some turmeric, ground cumin and ground coriander. -when softened slightly, add chopped chicken pieces and allow to seal in the heat of the pan. -add tomato passata and chopped, fresh tomatoes along with some dried oregano. -allow to simmer until chicken is tender and cooked through and sauce has thickened slightly. -add spinach and thinly sliced green beans and allow to cook for a further few minutes. -season to taste and serve over rice. Enjoy!
