Spicy Shakshuka . Servings 1 person. . INGREDIENTS . 1/2 onion diced. 1 garlic clove finely chopped. 1/2 green pepper sliced lengthways. 1/2 yellow pepper sliced lengthways. 1/2 can of tomatoes. 2 eggs. 1/4 tsp cumin seeds. 1/2 tsp smoked paprika. Small bunch fresh coriander chopped finely. 3 tbsp Daddy Cool’s Ketch the Reaper. 1 tbsp olive oil. Salt & pepper. . INSTRUCTIONS . Heat the olive oil in a large lidded frying pan (if your pan doesn’t have a lid you can pop a plate on top instead). Add the onions, garlic and peppers, cook on a medium heat until just soft. . Stir in the cumin seeds and smoked paprika, add the tomatoes, Ketch the Reaper and a generous splash of water, season well and simmer for 10 minutes uncovered keeping an eye on it, if it starts to dry out add a little bit more water, you want it to be reduced not runny, but not too dry either. . Break an egg into a cup and make a well, drop the egg into the well and repeat with the second egg, pop the lid on and cook for a few minutes until the egg whites are firm but the yolks are still runny.
