Ingredients: 1 and 1/2 cups all-purpose flour. 1 and 1/2 cups granulated sugar. 1/2 cup unsweetened cocoa powder. 1 and 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 2 large eggs. 1 cup whole milk. 1/2 cup vegetable oil. 2 teaspoons pure vanilla extract. 1/2 cup boiling water. 1/2 cup semi-sweet chocolate chips. 1/4 cup white chocolate chips. 1/4 cup dark chocolate chips. 1/4 cup milk chocolate chips. 1/4 cup chocolate shavings or curls for garnish.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until the batter is smooth and well combined. Gradually stir in the boiling water until the batter is thin and smooth. Be careful as the batter will be thin at this point, but that's okay. Fold in the semi-sweet chocolate chips, white chocolate chips, dark chocolate chips, and milk chocolate chips into the batter. Pour the batter evenly into the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
