Chocolate Apam Balik Dacquoise.

Dacquoise is a meringue based cake and Apam Balik is a Malaysian griddle pancake. It’s a peanut dacquoise with chocolate ganache, sweet corn filling and peanut praline mousseline. 

I was given an opportunity to come up with something different to sell at the shop. I thought why not reconstruct my favourite local dish to a cake form and add chocolate too. As weeks goes by, this has became a crowd pleaser. I thank my superior for given me this opportunity.
