These vegan chocolate berry muffins are moist, fluffy, and bursting with sweet berry flavor. They make a delightful treat for breakfast or snack time, and they're perfect for sharing with friends and family.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup cocoa powder. 1/2 cup granulated sugar. 1 tbsp baking powder. 1/2 tsp salt. 1 cup almond milk. 1/4 cup melted coconut oil. 1 tsp vanilla extract. 1 cup mixed berries such as raspberries, blueberries, strawberries. 1/2 cup vegan chocolate chips.
Instructions: Preheat oven to 375F 190C and line a muffin tin with paper liners. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt. In another bowl, mix almond milk, melted coconut oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the mixed berries and chocolate chips. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
