Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup raw honey or maple syrup. 3 eggs. 1 tsp vanilla extract. 1 tsp baking soda. 1/2 tsp cinnamon. 1/4 tsp salt. 1 cup grated zucchini, squeezed to remove excess moisture. 1/2 cup dairy-free chocolate chips.
Instructions: Preheat your oven to 350F 175C. Grease a loaf pan with coconut oil or line it with parchment paper. In a large mixing bowl, combine almond flour, coconut flour, baking soda, cinnamon, and salt. In another bowl, whisk together the eggs, honey or maple syrup, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix well until you have a smooth batter. Fold in the grated zucchini and chocolate chips. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
