Ingredients: 2 cups frozen cherries. 2 ripe bananas, frozen. 1/4 cup cocoa powder. 1/4 cup almond milk. 8 vegan chocolate cookies.
Instructions: In a food processor, blend frozen cherries, frozen bananas, cocoa powder, and almond milk until smooth and creamy. Scoop the ice cream mixture onto half of the vegan chocolate cookies and spread evenly. Top with the remaining cookies to create sandwiches. Optional: Roll the edges of the sandwiches in chopped nuts or shredded coconut for extra flavor and texture. Place the sandwiches in the freezer for at least 2 hours to firm up. Once firm, serve and enjoy!
