Enjoy the delicious taste of cherry and chocolate together with these Cherry Chip Cupcakes topped with a fluffy bourbon vanilla frosting. Adding bourbon to the frosting gives it a unique flavor. These cupcakes are great for special occasions or whenever you want a sweet treat with a touch of class.
Ingredients: 1 and 1/2 cups all-purpose flour. 1 and 1/2 teaspoons baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1/2 cup whole milk. 1/2 teaspoon vanilla extract. 1/2 cup maraschino cherries, chopped. 1/2 cup mini chocolate chips. For the Fluffy Bourbon Vanilla Frosting:. 1 cup unsalted butter, softened. 4 cups powdered sugar. 2 tablespoons bourbon. 1 teaspoon vanilla extract. 2-3 tablespoons heavy cream. Red food coloring optional. Cherries and chocolate chips for garnish optional.
Instructions: Preheat your oven to 350F 175C. Line a cupcake pan with cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined. Fold in the chopped maraschino cherries and mini chocolate chips. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. While the cupcakes are cooling, prepare the Fluffy Bourbon Vanilla Frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, bourbon, and vanilla extract. Beat until well combined. If the frosting is too thick, add heavy cream, one tablespoon at a time, until you reach your desired consistency. If desired, add a few drops of red food coloring to achieve a pink frosting color. Once the cupcakes are completely cool, pipe or spread the frosting on top of each cupcake. Garnish with maraschino cherries and mini chocolate chips, if desired. Serve and enjoy your Cherry Chip Cupcakes with Fluffy Bourbon Vanilla Frosting!

Indulge in the delightful combination of chocolate, cherries, and the unique twist of Dr. Pepper in this delicious cake. It's moist, flavorful, and perfect for any occasion.
Ingredients: 1 box of chocolate cake mix. 1 can 12 ounces of Dr. Pepper. 3/4 cup of vegetable oil. 3 large eggs. 1 cup of maraschino cherries, drained and chopped. 1/2 cup of semi-sweet chocolate chips. 1/4 cup of cherry juice from the maraschino cherries. 1/4 cup of powdered sugar for garnish. Whipped cream optional, for serving.
Instructions: Grease a 9x13-inch baking pan and preheat the oven to 350F 175C. Dr. Pepper, eggs, vegetable oil, and chocolate cake mix should all be combined in a sizable mixing bowl. Blend until thoroughly blended. Mix the semi-sweet chocolate chips and chopped maraschino cherries into the cake batter. Distribute the batter evenly in the baking pan that has been greased. Bake for about 30 to 35 minutes, or until a toothpick inserted in the center of the cake comes out clean, in a preheated oven. Make the cherry glaze while the cake bakes. The cherry juice and powdered sugar should be heated in a small saucepan over low heat, stirring until the sugar dissolves and the mixture begins to thicken slightly. Take off the heat. When the cake is done, take it out of the oven and allow it to cool for ten minutes or so in the pan. Using a fork or skewer, make holes all over the cake. Next, evenly pour the cherry glaze over the warm cake and let it soak in. Before serving, allow the cake to cool completely in the pan. Optional: Top each slice of Cherry Dr. Pepper Chocolate Cake with extra maraschino cherries and a dollop of whipped cream. Cheers to your Dr Pepper Chocolate Cake with cherries!
