Enjoy the irresistible mix of sweet and salty in these Liege waffles that you make yourself. These waffles are rich and buttery, and the pearl sugar on the outside caramelizes to make it look nice. For an extra-rich treat, dip them in melted chocolate and top with flaky sea salt.
Ingredients: 1 cup whole milk, warmed to 110F. 1/4 cup granulated sugar. 2 1/4 teaspoons active dry yeast. 3 cups all-purpose flour. 3 large eggs. 1 teaspoon vanilla extract. 1/4 teaspoon salt. 1 cup unsalted butter, at room temperature, cut into small pieces. 1/2 cup pearl sugar Belgian sugar. 8 ounces semi-sweet chocolate, chopped. 1/4 teaspoon flaky sea salt such as Maldon, for garnish. Vegetable oil or non-stick cooking spray, for waffle iron.
Instructions: In a small bowl, combine warm milk and granulated sugar. Sprinkle yeast over the mixture and let it sit for about 5 minutes, or until foamy. In a large mixing bowl, whisk together the flour, eggs, vanilla extract, and salt. Pour the yeast mixture into the flour mixture and stir until combined. Add the room-temperature butter, one piece at a time, mixing well after each addition. The dough will be sticky and elastic. Cover the bowl with plastic wrap and let the dough rise at room temperature for 1-2 hours, or until it has doubled in size. Gently fold the pearl sugar into the dough. Preheat your waffle iron and lightly grease it with vegetable oil or non-stick cooking spray. Divide the dough into small portions about 1/4 cup each and place them onto the preheated waffle iron. Cook until the waffles are golden brown and crisp. While the waffles are cooking, melt the chopped chocolate in a microwave or using a double boiler until smooth. Dip each waffle into the melted chocolate, allowing any excess to drip off. Place the dipped waffles on a parchment paper-lined tray.
