This recipe for vegan seitan offers a flavorful substitute for meat, enhanced by a homemade marinade. Made from vital wheat gluten, seitan is high in protein and goes very well with the marinade's savory-sweet taste.
Ingredients: 1 cup vital wheat gluten. 1/4 cup nutritional yeast. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 cup vegetable broth. 2 tablespoons soy sauce. 2 tablespoons tomato paste. 2 tablespoons maple syrup. 1 tablespoon apple cider vinegar. 1 tablespoon olive oil.
Instructions: Mix nutritional yeast, onion powder, garlic powder, and vital wheat gluten in a mixing bowl. To make the marinade, combine the vegetable broth, soy sauce, tomato paste, maple syrup, apple cider vinegar, and olive oil in a different bowl. Once the dry ingredients are combined with the marinade, stir until a dough forms. After kneading the dough for approximately five minutes, let it rest for ten minutes. Shape the dough into cutlets or other desired shapes by dividing it into small pieces. After bringing water to a simmer in a large pot, add the seitan pieces. Simmer for forty-five minutes, stirring now and then. After taking the seitan out of the pot, allow it to cool. Seitan can be chilled and then used in a variety of recipes or kept in the fridge for later use.
