The ideal balance of sweet and tart can be found in these homemade blueberry oatmeal bars with a hint of chocolate. They are simple to make and make a tasty snack or dessert.
Ingredients: 2 cups rolled oats. 1 cup all-purpose flour. 1/2 cup brown sugar. 1/2 cup unsalted butter 1 stick, melted. 1/4 cup pure maple syrup. 1/4 cup chocolate chips. 1 tsp vanilla extract. 1/2 tsp baking soda. 1/4 tsp salt. 1 1/2 cups fresh blueberries.
Instructions: Preheat your oven to 350F 175C and grease a 9x9 inch baking pan. In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, melted butter, maple syrup, chocolate chips, vanilla extract, baking soda, and salt. Mix until the ingredients are well combined. Press half of this mixture into the bottom of the prepared baking pan to form a crust layer. Spread the fresh blueberries evenly over the crust layer. Crumble the remaining oat mixture over the blueberries to create a streusel-like topping. Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and the blueberries are bubbling. Remove from the oven and let it cool completely in the pan. Once cooled, cut into bars and enjoy!
