Ingredients: 1 cup rolled oats. 1 cup all-purpose flour. 1/2 cup brown sugar. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 6 strips of bacon, cooked and crumbled. 2 medium apples, peeled, cored, and diced. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/4 cup chopped pecans optional.
Instructions: Preheat your oven to 350F 175C and grease a 9x9-inch baking pan. In a mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs. Press half of the crumb mixture evenly into the prepared baking pan to create the base layer. In a separate bowl, mix together the diced apples, crumbled bacon, maple syrup, and vanilla extract. Spread the apple and bacon mixture over the base layer in the baking pan. Sprinkle the remaining crumb mixture over the top of the apple and bacon layer. Add chopped pecans if desired. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the apples are tender.
