Ingredients: 1 cup cooked quinoa, cooled. 1/2 cup unsalted butter, melted. 1/4 cup unsweetened applesauce. 2 large eggs. 1 teaspoon vanilla extract. 1 cup granulated sugar. 1/2 cup cocoa powder. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup chocolate chips. 1/2 cup chopped walnuts optional.
Instructions: Preheat the oven to 350F 175C. Grease a baking pan. In a bowl, mix together cooked quinoa, melted butter, applesauce, eggs, and vanilla extract. In another bowl, whisk together sugar, cocoa powder, baking powder, and salt. Combine the wet and dry ingredients, stirring until well mixed. Fold in chocolate chips and chopped walnuts if using. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs not wet batter. Allow the brownies to cool in the pan before cutting them into squares.
