SELEUSS, SEATTLE, JULY 13, 2019: Introducing our new Buckwheat Blossom Honey chocolate truffle! Batch# 946, the first batch of the Buckwheat honey truffle, made on June 25, 2019.
Ganache: The Buckwheat Blossom Honey chocolate ganache is made with local organic cream, our specially formulated 63%+ fine dark chocolate and a robust, dark honey gathered from the nectar of the delicate, white flowers of the buckwheat grain.
Truffle: This special honey ganache is typically encased in a 52% semisweet chocolate and then enrobed in our Moretta™ 74%+ dark chocolate, and topped with either Coconut Palm Sugar, or Dark Muscovado.
Pairing: Tawny Porto, Sherry, warm brandy or Cognac, Malbec, Merlot, or contrast with espresso or black tea.
Buckwheat Honey: This most hearty and robust honey is harvested from the tiny white blossoms on the buckwheat plant, planted in Montana and the Dakotas [True Source Certified]. Buckwheat Honey is very dark in color, typically compared with black strap molasses, with a musty, earthy aroma and a touch of spice.
Buckwheat Honey has been found to have higher levels of antioxidants than other honeys according to the Department of Food Science & Technology at the National Fisheries University, Shimonoseki, Yamaguchi, Japan and as well as a more effective treatment for nighttime coughs than OTC cough medicine according to Penn State College of Medicine.
