Ingredients: 2 boneless, skinless chicken breasts. 1/4 cup soy sauce. 2 tablespoons rice vinegar. 1 tablespoon honey. 1 teaspoon sesame oil. 4 cups mixed salad greens. 1 cup shredded red cabbage. 1/2 cup shredded carrots. 1/2 cup sliced cucumber. 1/4 cup chopped fresh cilantro. 1/4 cup chopped green onions. 1/4 cup chopped peanuts. 1/4 cup crispy wonton strips.
Instructions: In a small bowl, whisk together soy sauce, rice vinegar, honey, and sesame oil. Set aside. Season chicken breasts with salt and pepper, then grill or pan-sear them until cooked through, about 6-8 minutes per side. Let the chicken rest for a few minutes, then slice it into thin strips. In a large salad bowl, combine mixed greens, shredded red cabbage, shredded carrots, sliced cucumber, chopped cilantro, and chopped green onions. Add the sliced chicken on top of the salad. Drizzle the dressing over the salad and toss everything together to coat evenly. Sprinkle chopped peanuts and crispy wonton strips on top of the salad for added crunch. Serve immediately and enjoy!
