Ingredients: 2 cups white beans, soaked overnight. 1 lb Spanish chorizo sausage, sliced. 1 onion, finely chopped. 3 cloves garlic, minced. 1 bunch fresh spinach, washed and chopped. 1 can 14 oz diced tomatoes. 2 cups chicken broth. 2 teaspoons smoked paprika. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, saut until translucent. Add sliced chorizo and cook until browned. Stir in smoked paprika, salt, and pepper. Add soaked white beans, diced tomatoes, and chicken broth. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours or until beans are tender.
