This Gluten-Free Queso Fundido with Chorizo is a crowd-pleasing gameday appetizer that's packed with flavor. The combination of spicy chorizo, melted cheese, and colorful peppers makes it irresistible!
Ingredients: 1 tablespoon olive oil. 8 ounces gluten-free chorizo, casing removed. 1 small onion, diced. 2 cloves garlic, minced. 1 jalapeo pepper, seeded and diced. 1 red bell pepper, diced. 1 yellow bell pepper, diced. 8 ounces gluten-free Monterey Jack cheese, shredded. 8 ounces gluten-free sharp cheddar cheese, shredded. 1/4 cup chopped fresh cilantro, for garnish.
Instructions: Warm the oven up to 190C 375F. Put olive oil in a pan and heat it over medium-low heat. Break up the chorizo as you cook it until it turns brown. To the pan, add diced onion, minced garlic, jalapeo pepper, and diced bell peppers. It will take about 5 minutes of cooking until the vegetables are soft. Move the cooked chorizo and vegetables to a dish that can go in the oven. Spread out the shredded Monterey Jack and cheddar cheese on top of the chorizo mixture. Put it in an oven that has already been heated and bake for 10 to 15 minutes, or until the cheese melts and bubbles. Before serving, sprinkle with chopped fresh cilantro. Serve hot with vegetable sticks or gluten-free tortilla chips to dip.
