A flavorful and nutritious Greek baked beans recipe, infused with aromatic herbs and spices. Perfect as a side dish or a main course.
Ingredients: 500g dried white beans. 1 large onion, finely chopped. 3 cloves garlic, minced. 1/2 cup olive oil. 2 cups tomato puree. 1 teaspoon dried oregano. 1 teaspoon dried thyme. 1 teaspoon ground cumin. Salt and pepper to taste. 2 cups water.
Instructions: For one whole night, soak the dried white beans in water. Set the oven's temperature to 180C 350F. Add the minced garlic and chopped onion to a large pot and saut them in olive oil until they become soft. Toss in the soaked and drained beans, tomato puree, cumin, thyme, oregano, salt, and pepper. Blend thoroughly. Pour two cups of water into the baking dish with the mixture. Put a lid on it or cover it with foil. Bake, stirring occasionally, in the preheated oven for 2 to 2.5 hours, or until the beans are tender. Before serving, take it out of the oven and allow it to cool slightly. If preferred, garnish with a drizzle of olive oil or fresh herbs.
