Chronic Mastication Clam Chowder December 17 2012
I looked at a few recipes on the internet, mostly to insure that I didn't give myself food poisoning and to gather what is typically in clam chowder. I then constructed my recipe to make the type of soup that I wanted. I wanted to make something that was somewhat like Campbell's chunky clam Chowder but with out the preservatives leaving just hearty flavourful food. The end result turned out pretty well with big chunks of potato's and a thick creamy texture.
1 litre of cream
1 large red onion,diced
4 strips of bacon chopped
2 can baby clams, drained
6 cups chopped potatoes
1 tsp thyme
**3/4 cup flour to thicken the cream ** the flour comes out in the flavour , in the future I will just puree a portion of the soup to build up the texture.
Splash a bit of water in the bottom of the stock pot and cook the bacon. When cooked drain off the excess fat,leaving some to cook the diced onion until soft. When the onions are soft add potatoes, clams, thyme and cream. Do not bring to boil. Let simmer until potatoes are soft. If adding flour to thicken do so or puree 1/3 to 1/2 of the mixture, return to stock pot and simmer for another 5 to 10 minutes.
*ok their might have been an extra ingredient.
I should have had a photo of the finished product but it seems to be gone. Just assume it was because it was so good I ate it all and there wasn't any chance to snap a picture.
