Enjoy the delightful flavors of churros in cookie form with these Churro Cookies, perfect for Cinco de Mayo celebrations! These cookies have a buttery, cinnamon-sugar exterior and a soft, chewy interior that will satisfy your churro cravings.
Ingredients: 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/4 cup granulated sugar. 1/4 teaspoon salt. 1/2 teaspoon vanilla extract. 1/4 cup milk. 1/2 cup cinnamon-sugar mixture for coating.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy. Mix in the vanilla extract until it's all well mixed in. Slowly add the flour and salt to the wet ingredients, mixing them in until the dough forms. Mix the dough with the milk until it is smooth and well mixed in. With a star-shaped piping tip, pipe the dough onto the baking sheet that has been prepared in the shape of churros. The cookies should be baked in a hot oven for 12 to 15 minutes, or until they turn golden brown. Take the cookies out of the oven and let them cool down a bit. Roll the cookies in the cinnamon-sugar mix to cover them all over while they are still warm. On a wire rack, let the cookies cool all the way down before serving.
