Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 cup buttermilk. 1/2 cup whole milk. 1 large egg. 2 tablespoons unsalted butter, melted. 1 teaspoon vanilla extract. For Cinnamon Sugar Coating:. 1/2 cup granulated sugar. 1 teaspoon ground cinnamon. 1/4 cup unsalted butter, melted.
Instructions: You will need a large bowl to mix the flour, 2 tablespoons of sugar, baking powder, baking soda, salt, and 1 teaspoon of ground cinnamon. Buttermilk, whole milk, egg, melted butter, and vanilla extract should all be mixed together in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix it too much; a few lumps are fine. Put a nonstick skillet or griddle over medium-high heat and use cooking spray or butter to lightly coat it. For every pancake, pour 1/4 cup of the batter onto the hot pan. In about two to three minutes, the surface will start to bubble and the edges will start to set. After you flip the pancakes, cook them for another minute or two, or until they are golden brown and fully cooked. Put 1/2 cup of granulated sugar and 1 teaspoon of ground cinnamon in a shallow dish.
