In these irresistible churros-inspired cookies, enjoy the delightful fusion of traditional churros and rich chocolate. The buttery, crispy cookies dusted with cinnamon sugar and dipped in melted chocolate will transport you to a world of sweet indulgence.
Ingredients: 1 cup all-purpose flour. 1/2 cup unsalted butter. 1/2 cup water. 2 tablespoons granulated sugar. 1/4 teaspoon salt. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup semisweet chocolate chips. 1/4 cup powdered sugar. 1/4 teaspoon ground cinnamon.
Instructions: Put the water, butter, granulated sugar, and salt in a saucepan. Put it on medium heat and stir it around until the butter melts and the mixture starts to boil. Turn down the heat and add the flour all at once. Mix it really well until it comes together in a ball and moves away from the pan's sides. Take it off the heat and let it cool down for a while. Each time you add an egg, make sure to beat the dough well afterward so it stays smooth and shiny. Add the vanilla extract and mix well. Put the dough in a piping bag with a star-shaped tip. Warm the oven up to 375F 190C and put parchment paper on a baking sheet. To make the dough look like churros, pipe it onto the baking sheet that has been prepared in strips. Put the cookies in the oven and bake for 20 to 25 minutes, or until they are crispy and golden brown. In 20-second bursts, stir the chocolate chips in a bowl that can go in the microwave until they are smooth and melted. In a different bowl, mix the cinnamon powder and sugar. Once the churros have cooled, dip them in the melted chocolate and then cover them with the cinnamon-sugar mix. To let the chocolate set, put the cookies on a wire rack. With a cup of hot chocolate or your favorite drink, serve the Churros y Chocolate Cookies. Have fun!
