Ingredients: 2 cups canned pumpkin puree. 1 cup granulated sugar. 1/2 cup vegetable oil. 1 large egg. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 1 teaspoon vanilla extract. 1 teaspoon ground cinnamon. 1/4 cup heavy cream.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Granulated sugar, vegetable oil, egg, and vanilla extract should all be mixed together in a bowl. Mix everything together well. Put the flour, baking soda, ground ginger, nutmeg, and cloves in a different bowl and mix them together with a whisk. Add the dry ingredients to the wet ones one at a time and mix just until everything is combined. Use a spoon or a cookie scoop to drop spoonfuls of the batter onto the baking sheet that has been prepared. Leave some space between each one. After the oven is hot, bake the cookies for 10 to 12 minutes, or until they are set and a toothpick stuck in the middle comes out clean. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. For the cinnamon creme frosting, beat the butter until it is smooth and creamy. Add the heavy cream, vanilla extract, ground cinnamon, and powdered sugar one cup at a time. Mix the frosting well until it's fluffy and smooth. Spread a lot of cinnamon creme frosting on the flat side of one cookie once they are completely cool, then put another cookie in between them. Do this again and again until all of the cookies are paired up and filled with frosting. Put a little ground cinnamon on top of each whoopie pie to make it look nice.
