I'm curious now, what are some of your favourite canon moments and interactions between Sonic and Tails from all the different Sonic media?

So, of course this is neither the first or last time I will be talking about this scene but
Sonic Movie 2: The Bar Scene
In this case, I'm specifically talking the scene after the dance fight. This scene is very vulnerable for Tails, as he admits to Sonic how much Sonic has inspired him and made him feel okay being himself. I adore the animation here. The way you can tell just how much emotion Tails is holding in as he explains his experiences, the way Sonic reacts to being hugged so suddenly (telling us they're not so close yet that Sonic is receptive to surprise physical contact).
Sonic telling Tails how glad he is that he's here is so good, not to mention how fast of friends they became. And this moment is also followed up by them sleeping back to back
Sonic covering Tails with a blanket as he sleeps, Tails' tails covering up Sonic in turn as he tries to sleep🥹💖
Definitely one of the scenes that ended up being a catalyst for me getting into Sontails.

Sonic Prime: Sonic Apologizes
On this account I've talked a lot about Sonic/Nine, but there are a lot of Prime!Sonic and Prime!Tails moments that mean a lot to me too, sparse as they are
In general, Prime!Sonic has a bit of a history of missing sometimes what the people around him are feeling, though he often means well (or tries to). I've always liked here how when Sonic realizes (given Tails' expression after the prior Eggman battle and his friends' comments) that he might have angered Tails with his actions, he seeks him out and tries to apologize.
It's also clear when Sonic puts down the comic books and spins Tails to face him that the idea of not making up with him (and having Tails stew in annoyance about it) bothers him. And even though Tails does cut him off, telling him it's cool (kind of like a "nah don't worry about it" reply), we can tell based upon his smile and "I appreciate it" that he, well. Really does appreciate it. Personally, I like to interpret this scene as Tails genuinely trying to put that frustration aside, as he's used to dealing with Sonic not quite listening to him, but also genuinely feeling touched that Sonic would apologize to him about it
I dunno it's small but I like to think that little moments like that remind Tails that Sonic does consider him and care about him, even if he knows it already and even if Sonic frustrates him from time to time. It's probably nice to see the "proof in the pudding" so to speak. And, to me, even a small scene like this shows how close they are and how they care about each other

Sonic Generations (3DS): The Sonics Go Super
For those who haven't played it, the 3ds version of Sonic Generations isn't just a port of the game that happened to be remastered last October. It has stages and scenes exclusive to it. Rather than Sonic showing up to his surprise party right on time, in the 3ds version he arrives early (as does the Time Eater event). This results in only Sonic and Tails being sucked into White Space from the birthday party.
This change also resulted in the game having some Sonic and Tails interactions that were exclusive to the 3DS version. There are a lot of good little moments, in my opinion, but this one is definitely a favorite.
In the console version of Generations, the Sonics are beat up pretty badly by the Time Eater (rendering them unconsious). The chaos emeralds react and put them into their super forms due to Sonic's friends and allies believing in him.
However, in the 3ds version of this scene, Classic Tails and Modern Tails take the final blow that would render the Sonics unconscious (as in the console version). The Sonics worry over their Tails, with Modern Sonic asking if he's okay and why they would do that, and Classic Tails apologizing before admitting that he wanted to help them too. It's this act that causes the Sonics to become reinvigorated, and they use the power of the chaos emeralds to enter their super forms after Modern Sonic says: "We can't let Tails do all the hard work here, can we, partner?"
There's just something so good to me about the Tails not being able to stand by as the Sonics are pummeled, taking a heavy blow for them, and the Sonics going super after this

Sonic Colors (Console ver): Tails Saves Sonic
I'll admit, I do find this scene from Colors to be a bit underrated personally.
In this scene, Tails pushes Sonic out of the way of Eggman's mind control beam, taking the blast meant for Sonic himself. After witnessing Tails take this blast (and the pain it puts him in), Sonic grits his teeth and makes a beeline for Eggman. However, Eggman begins using the mind controlled Tails as a meat shield, halting Sonic's advances.
Sonic attempts initially to get Tails to "wake up" (so to speak) by calling his name, then demands to know what Eggman did to him. Eggman seems amused by this situation, commenting on how Sonic will have to go through his best friend to get to him, and even planning on making them fight each other for his amusement.
Luckily, the power on the mind control beam runs out before Sonic is forced to fight Tails, and we get to watch as Sonic catches his best friend (continuing to worry over his well-being) as his body falls limp.
Sonic Colors in general has a lot of quippy, unserious moments, but it's moments like these that show off how much the two mean to each other.
(Not to mention how this scene with Tails pushing Sonic out of the way of Eggman's attack lowkey parallels one of the final cutscenes of the game, where Sonic pushes Tails into the space shuttle (Guessing? Dunno what it's called exactly to be honest. Escape pod?) so he can get him to safety before Eggman can begin his attack)
