I took a bite of dinner and immediately thought to myself: “Damn, I forgot how good meatloaf is!” Growing up, meatloaf was a family favorite of mine and my siblings, but my mom made is very differently than this. She used to take the back of a wooden spoon and jab it into the meatloaf then stick huge chunks of cheese to help keep the meatloaf moist. This meatloaf is made is right, so no added grease is necessary. This perfectly moist, packed full of flavor and I just love it.
