Celebrate National Toasted Marshmallow Day with this trio of delicious toasted marshmallow ice cream flavors: classic toasted marshmallow, chocolate chip toasted marshmallow, and s'mores toasted marshmallow.
Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1 teaspoon vanilla extract. Pinch of salt. 6 large egg yolks. 1 cup toasted marshmallows. 1/2 cup chocolate chips. 1/2 cup crushed graham crackers.
Instructions: Put the cream, milk, sugar, vanilla extract, and salt in a saucepan and heat them over medium-low heat until they start to simmer. Take it off the heat. Whisk the egg yolks in a different bowl. Pour a little of the hot cream mixture into the egg yolks at a time while whisking the eggs all the time. Put the egg mixture that has been tempered back into the saucepan with the rest of the cream mixture. Keep stirring the mixture over low heat until it gets thick enough to coat the back of a spoon. Use a fine-mesh sieve to pour the custard into a clean bowl. Add the toasted marshmallows and mix them in until they melt and are fully mixed in. Put the bowl lid on top of the mixture and put it in the fridge until it's cold, preferably overnight. Once the custard is cold, use an ice cream maker and follow the directions on the box. For the first flavor, add the chocolate chips toward the end of the churning process. For the second flavor, add the crushed graham crackers. Put each flavor in its own container and freeze them until they are solid. Serve and have fun!
