This is a quick and tasty side dish that is keto-friendly. It has garlic, Parmesan cheese, and creamy spinach. It goes well with any low-carb meal.
Ingredients: 1 lb fresh spinach leaves. 2 tbsp butter. 2 cloves garlic, minced. 1/2 cup heavy cream. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Pinch of nutmeg optional.
Instructions: Wash the spinach leaves thoroughly and remove any tough stems. In a large skillet, melt butter over medium heat. Add minced garlic and saut until fragrant. Add the spinach leaves to the skillet and cook until wilted, stirring occasionally. Pour in the heavy cream and simmer for a few minutes until the mixture thickens slightly. Stir in grated Parmesan cheese until melted and well combined. Season with salt, pepper, and a pinch of nutmeg if desired. Serve hot and enjoy!
