Ingredients: 4 salmon fillets. 2 tablespoons olive oil. Salt and pepper to taste. 1 tablespoon butter. 1 onion, diced. 3 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1 cup spinach leaves. 1 cup heavy cream. 1/2 cup grated Parmesan cheese. 1 tablespoon fresh dill, chopped.
Instructions: Season salmon fillets with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add salmon fillets to the skillet and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside. In the same skillet, melt butter and add diced onion. Cook until onion is soft and translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant. Stir in cherry tomatoes and spinach leaves, cooking until spinach is wilted and tomatoes are softened. Pour in heavy cream and grated Parmesan cheese, stirring until sauce is creamy and well combined. Return salmon fillets to the skillet, spooning some sauce over the top.
