Ingredients: 1 whole chicken, cut into pieces. Salt and pepper to taste. 1 preserved lemon, thinly sliced. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 tablespoon fresh thyme leaves. 1/2 cup chicken broth.
Instructions: Preheat oven to 400F 200C. Season chicken pieces with salt and pepper. Place chicken in a roasting pan and scatter preserved lemon slices over the top. Drizzle olive oil over chicken and lemon slices. Sprinkle minced garlic and thyme leaves over chicken. Pour chicken broth into the bottom of the pan. Roast in the preheated oven for 45-50 minutes, or until chicken is golden brown and cooked through. Serve hot and enjoy!
