Chia seed bread rolls
Makes 5 servings Ingredients: 1/4c coconut flour 3 tbsp psyllium husk 1/8 tsp salt 1 tsp baking powder 2 tsp chia seeds 1/2c egg whites 1/2c hot water 1 tbsp apple cider vinegar
Directions: Preheat oven to 160c. Sift together coconut flour, psyllium husk, baking powder and salt. Add egg whites and apple cider vinegar, then mix until a dough starts to form. Pour in hot water and mix well with hands until a light and fluffy dough is created. Add chia seeds and gently fold into dough. Separate dough into 5 equal pieces and roll each piece into a ball. Place dough on a cookie sheet lined with baking paper then flatten slightly with your hands. Top with whatever you’d like (I used pepitas) and bake for 25 minutes, or until golden. These are best eaten immediately as they will lose their bread-like texture after a couple of days. * This recipe is loosely adapted from here
