Clotxa is the most typical food from Ribera d’Ebre, an area in the south of Catalonia. 🥙 It consists of the characteristic Catalan round bread called pa de pagès emptied and filled with salted herrings, onion, tomato, garlic, olive oil and salt.
The word “clotxa” comes from Mossarabic (the Romance languages spoken in the Middle Ages by the non-Arabic speaking population, when this area was part of the Islamic caliphates) and it means “hole”, because of the hole done when emptying the bread.
