Ingredients: 2 cups fresh or frozen cherries, pitted and halved. 1 cup granulated sugar. 1/4 cup water. 1 tablespoon lemon juice. 1/2 teaspoon almond extract.
Instructions: In a medium saucepan, combine the cherries, sugar, and water. Cook over medium heat, stirring occasionally, until the sugar has dissolved and the cherries release their juices, about 5 minutes. Reduce the heat to low and simmer for 20-25 minutes, or until the mixture thickens, and the cherries become soft and glossy.
