Today’s spurious internet holiday is National Cocoa Day. And made-up though it may be, we’re getting into the cozy, chocolaty spirit with this 1876 photograph of the exhibit booth of chocolatier Henry Maillard (1816–1900).

The booth was part of the Centennial International Exhibition of 1876, the first major U.S. world's fair. Held in Fairmount Park in Philadelphia, the fair celebrated the one hundredth anniversary of American Independence and drew nearly ten million visitors during its six month run.

Maillard’s booth was in building #2 of Machinery Hall, one of five main buildings that complemented some 250 pavilions and auxiliary structures, including twenty-four state buildings, each designed in a regional style.

Not depicted in this photograph are Maillard’s other contributions to the affair; massive chocolate and sugar models of pilgrims, founding fathers, and famous events in American history like the capture of Fort Ticonderoga.

Years after this photograph was taken, Maillard would set up shop again at another world’s fair, the 1889 Paris Universal Exhibition. Maillard had left France for New York City in 1848. For his 1889 return, he prepared a 400 pound chocolate statue for exhibition. His former countrymen were not impressed; French critic Eric Monod summed up the stunt by declaring that “Only a Yankee could have conceived the idea of creating an edible Venus de Milo”.
