Medjool dates are sweet, and these vegan Medjool Date Peanut Butter Eggs are a delicious treat. They have peanut butter, cocoa powder, and dates. They are a great way to satisfy your sweet tooth without eating too much.
Ingredients: 1 cup Medjool dates, pitted. 1/2 cup peanut butter. 1/4 cup shredded coconut optional. 1/4 cup cocoa powder. 2 tablespoons maple syrup optional. Pinch of salt.
Instructions: Melt peanut butter, Medjool dates, cocoa powder, maple syrup, and a pinch of salt in a food processor. Add shredded coconut if using, and blend until a sticky dough forms. Roll out small pieces of dough into the shape of an egg. Put the egg shapes on a baking sheet that has parchment paper on it. Put the eggs in the fridge for 30 minutes to make them firm.
