This Crockpot Coconut Lime Chicken has tender chicken breasts cooked in a tasty coconut lime sauce. It's a quick and easy meal that's great for a busy day. When you mix coconut milk, lime juice, and soy sauce, you get a tangy and creamy sauce that goes great with chicken.
Ingredients: 4 boneless, skinless chicken breasts. 1 can 13.5 oz coconut milk. 3 tablespoons soy sauce. 3 tablespoons honey. Juice of 2 limes. 3 cloves garlic, minced. 1 teaspoon ginger, minced. Salt and pepper to taste. 2 tablespoons chopped fresh cilantro, for garnish. Lime wedges, for serving.
Instructions: Place chicken breasts in the slow cooker. In a mixing bowl, combine coconut milk, soy sauce, honey, lime juice, garlic, ginger, salt, and pepper. Mix well. Pour the mixture over the chicken breasts. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is cooked through and tender. Once cooked, shred the chicken using two forks and mix it well with the sauce. Serve the chicken garnished with chopped cilantro and lime wedges. Enjoy!
