Make masala by adding and crush cinnamon, cardamoms, cloves, and ginger in a mortar-pestle.
Heat water, when boiled add crushed masala and boil for 2 to 3 minutes.
Add Assam tea and boil for a minute to get mild tea, to get a stronger blend boil for a few more minutes.
Add milk, if using cold milk boil for at least 2 minutes. Pour tea through a strainer into serving cups.
2 to 3 teaspoons of black tea leaves
1 to 2-inches of ground or crushed ginger
4 teaspoons of organic sugar (add to taste)
Boil water, add crushed ginger. Allow the mixture to boil for 4 to 6 minutes until the water turns yellowish in color.
Add sugar, black tea leaves and simmer for 2 minutes until the mixture turns red.
Add warm milk and strain into serving cups.
3. South Indian filter coffee
3 teaspoons ground coffee
Manually you can fill a perforated vessel with ground coffee, spread the coffee evenly with a spoon.
Place a pressing disc on the coffee powder.
Boil 2 cups of water, when boiled pour water on top of the vessel until ¾ full. Cover the top with a lid for 10 to 15 minutes until the decoction settles in the bottom of the lower vessel.
Heat ¾ cup of milk, Strain a ¼ to ⅓ of the milk in a tumbler with coffee.
