とりあえず色の汚い実だけを選んで coffee beans を取り出すことにしたのだ。真っ黒で小さな実は去年の実じゃないかな？まだ枝についていたので摘んできたのだが真っ黒の実は干からびているようで豆を取り出せない。水に漬けたら崩れてしまった。先週かな、少し前に摘んだ実も干している間に完熟を通り越して黒く変色してしまっている。今回は実を1時間ほど水に漬けて、水の中で実を潰して果肉を捨てて、ヌルヌルの豆を少量の水でコメを研ぐような感じでこすってみた。手の中で豆をこすりあわせたり洗濯機みたいに回したりしたら前回よりは綺麗になった。そんで作業が終わったら爪が欠けていて指先が炎症っていうのか赤くなっていた。前回は親指の爪で果肉を剥がしたのだが同じように痛くなった。豆が固いから痛くなるのだろうか？
今更だけど Coffee beans の精製について調べている。もう手遅れなんだけどcoffeeの実を摘むところから間違えているみたいなんだよな。真っ赤な完熟の実だけ摘むそうなのだ。
