Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/4 teaspoon salt. 1/4 cup cocoa powder. 1/4 cup milk. 2 cups confectioners' sugar. 2 tablespoons boiling water. 1/2 teaspoon instant coffee granules. 1/2 teaspoon vanilla extract. 1 cup semisweet chocolate chips. 1 tablespoon vegetable oil.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Make the butter and sugar fluffy by beating them together in a large bowl. Add the eggs one at a time and beat well. Then add the vanilla and mix well. Add the flour and salt slowly and mix just until combined. Split the dough in half. Add the cocoa powder to one half and mix it in until it's fully mixed in. Drop spoonfuls of each dough onto the baking sheet that has been prepared. Use the chocolate and vanilla doughs in a checkerboard pattern. For a marbled look, use a spatula to gently swirl the doughs together. After the oven is hot, bake for 12 to 15 minutes, or until the edges are just beginning to turn golden. For a few minutes, let them cool on the baking sheet. Then, move them to a wire rack to cool completely. Pour hot water, instant coffee granules, and vanilla extract into a small bowl. Mix the sugar, coffee, and extract together to make the glaze. Spread the vanilla glaze on one half of each cookie once they are completely cool. When you put the chocolate chips and vegetable oil in a bowl that can go in the microwave, melt them in 20-second bursts while stirring them. On the other half of each cookie, spread the chocolate glaze. Before you serve or store the cookies, let the glazes set.
