These spicy harissa quesadilla with lamb tacos are a fusion of flavors, combining the bold and fiery taste of harissa with the richness of lamb, caramelized onions, and creamy cojita-feta cheese. It's a mouthwatering delight that's perfect for a flavorful taco night!
Ingredients: 1 lb ground lamb. 2 tablespoons harissa paste. 1 large onion, thinly sliced. 2 tablespoons olive oil. 8 small flour tortillas. 1 cup cojita-feta cheese blend. Salt and pepper to taste. Fresh cilantro leaves for garnish. Lime wedges for serving.
Instructions: Heat olive oil in a large skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes. Season with salt and pepper. Remove from the skillet and set aside. In the same skillet, add the ground lamb and cook over medium-high heat, breaking it apart with a spatula, until it's browned and cooked through, about 5-7 minutes. Stir in the harissa paste and cook for an additional 2 minutes, allowing the flavors to meld together. Remove from heat. Place a flour tortilla in the skillet and sprinkle with a generous amount of the cojita-feta cheese blend. Top with a portion of the spiced lamb and caramelized onions. Place another tortilla on top and press down gently. Cook until the bottom tortilla is golden brown and crispy, then carefully flip and cook the other side until golden and the cheese is melted. Repeat with the remaining tortillas and filling ingredients. Once the quesadillas are cooked, cut each one into wedges. Serve the spicy harissa quesadilla with lamb tacos with fresh cilantro leaves and lime wedges on the side for squeezing over the tacos.
