Asian Coleslaw
Ingredients
1 medium cabbage
4 carrots
2 zucchini
4 green onions
1/4 cup sunflower seeds
Dressing:
1/4 cup mirin
1/4 cup soy sauce
1 tbsp. brown sugar
1 tbsp. olive oil
2 tsps. sesame oil
Shred cabbage, carrots and zucchini, then mix together in large bowl with sunflower seeds and diced green onions.
In a small bowl whisk together all ingredients for dressing, you may have to heat up dressing to dissolve brown sugar (just microwave w/ soy sauce for 20 sec). Pour dressing over cabbage, zucchini, carrot mixture and toss together so dressing is well distributed. Chill for 20 mins and serve cold.
