This colorful carrot hummus is a great change from the usual chickpea dip. It has a hint of sweetness from the fresh carrots and earthy spices that balance it out. You can dip vegetables in it, spread it on toast, or use it to add flavor to wraps and sandwiches.
Ingredients: 2 cups cooked chickpeas. 1 cup grated carrots. 2 cloves garlic. 3 tablespoons tahini. 2 tablespoons lemon juice. 1/4 cup olive oil. 1/2 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste.
Instructions: In a food processor, blend the cooked chickpeas, grated carrots, garlic, tahini, lemon juice, and olive oil until smooth. Add the ground cumin, paprika, salt, and pepper. Blend again until well combined and creamy. Adjust seasoning to taste. Transfer the hummus to a serving bowl. Drizzle with a little olive oil and sprinkle with extra paprika before serving, if desired.
