MOROCCAN AUBERGINE AND CHICKPEA SALAD
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Serves: 2-4
Ingredients:
2 aubergines, thinly or thickly sliced
1 can chickpeas
2-3 tbsp olive oil
1 red onion, finely chopped
Mint leaves, as required
For the dressing:
1 tsp paprika powder
1 tsp cumin powder
1 tsp honey
1 tbsp lemon juice
3-4 tbsp olive oil
Directions:
Heat your grill pan on the stove. Sprinkle the sliced aubergine with salt, pepper and brush with olive oil. Place them on the pan and grill until brown and cooked. Remove from the grill pan and put aside.
Drain and rinse the chickpeas, then toss them in a bowl with the grilled aubergine slices, chopped red onion and mint leaves.
Thoroughly mix ingredients for the dressing in a bowl and add them to the salad.
Garnish with mint leaves and honey drizzle.
Serve and enjoy :)

Here's a simple dough recipe for a perfect home made pizza :)
Total Time: 4 hours (including proofing time)
Servings: Makes 3 12" round pizzas
Ingredients for the dough:
Flour- 3 cups, 500 grams
Instant Yeast- 2 tbsp
Sugar- 2.5 tsp
Salt- 1.5 tsp
Oil- 5-6 tbsp
Warm water- as required
Directions:
Mix all the dry ingredients in a large bowl or mixer.
Add oil and rub it in with your fingertips till the flour mixture gets grainy.
Now slowly add warm water and knead until a nice soft dough is formed.
Knead for 7-8 minutes. The more you knead the dough the nicer and fluffier it will be.
Shape the dough into a ball and apply oil to it with your hand.
Now cover it with a wet cloth and keep it in a warm place for at least 3 hours or until the dough has doubled in size.
Top the pizza dough with your favorite toppings, bake it until the dough is brown and crisp and serve hot :)
