Shrimp Cilantro-Jalapeño Po- Boy Sandwich
An amazingly refreshing shrimp and cabbage slaw po-boy sandwich that taste perfectly and a balance of flavor that keep you longing for more.
1 lb 41/50 shrimps, tail off
1 loaf baguette bread
1/3 cup sriracha mayo
1 cups cabbage, shredded
1/2 cups purple cabbage, shredded
1 red onion, julienne
2 carrots, julienne
1 red pepper, julienne
1 cup cilantro
1/3 cup jalapeño, julienne
2 tbsp cup wine vinegar
1/3 cup olive oil
1 lime, zest and juice
1 teaspoon pepper
1/2 teaspoon sea salt
Directions
Step 1
Shredded cabbage, purple cabbage, julienne onions,carrots, red pepper, jalapeño, chop cilantro place in a bowl. Add to the mixture vinegar, juice of lime, oil, pepper, and salt.
Step 2
Toss mixture until well combined. Taste and add more vinegar, salt, or pepper if needed. Let rest in the fridge for at least 1 hour.
Step 3
Oil a hot sauté pan, add shrimp and sautéed for 2 minutes or until cook. Take the bread slice lengthwise spread mayo, then on the bottom bun place the slaw, then shrimp, and top bun. Ready to be serve. ¡Buen provecho!
