Ingredients: 4 ripe mangoes, peeled, pitted, and chopped. 1 cup white sugar. 1/2 cup apple cider vinegar. 1/2 cup finely chopped red onion. 1/4 cup raisins. 1/4 cup chopped ginger. 2 cloves garlic, minced. 1/2 teaspoon salt. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon red pepper flakes adjust to taste.
Instructions: Combine all ingredients in a large saucepan. Bring the mixture to a boil over medium-high heat, stirring frequently. Reduce the heat to low and simmer for 45-60 minutes, or until the chutney thickens and the mangoes are soft, stirring occasionally. Remove from heat and let it cool to room temperature. Transfer the chutney to sterilized jars, seal tightly, and store in the refrigerator. Serve as a condiment with your favorite dishes.
