Ingredients: 4 large red onions, thinly sliced. 1 cup white vinegar. 1/2 cup apple cider vinegar. 1/2 cup water. 1/4 cup granulated sugar. 1 tablespoon salt. 1 teaspoon whole black peppercorns. 2 cloves garlic, smashed. 1 teaspoon mustard seeds. 1 teaspoon coriander seeds.
Instructions: In a saucepan, combine white vinegar, apple cider vinegar, water, sugar, salt, peppercorns, garlic, mustard seeds, and coriander seeds. Bring the mixture to a boil, stirring until the sugar and salt dissolve. Add the sliced red onions to the boiling mixture and let it simmer for 1-2 minutes. Remove the saucepan from heat and let the mixture cool to room temperature. Transfer the pickled onions along with the liquid into a large sterilized jar.
