So as I m feeling still a bit ropey ( but I ve felt worse lol ) I made ( from scratch ) veg stock and veg soup ( the soup is very green lol) I used the stock to make turkey curry ( which is amazing!!) and also to cook up the rice!! -. I had some apples and pears going begging and some gluten free mince meat - so now we have a gluten free crumble for pudding !! . I need some comfort food! So we have it !! . The stock was 2 pints of water - veggie ends - an onion - left over red cabbage - garlic - courgettes- so all the ends were in the top part - I use the pan of a steamer suspended in a big pot of water - all the good parts of the veg - onion - garlic go in to the pot. I brought it to the boil - then left it on a low heat for 1 1/2 hours. Then I gave it a whizz up . . Tomorrow I m making diffuser oils from organic lemons and I making sun dried ( oven dried ) tomatoes and preserving them in oil with some herbs and rock salt. ( another Christmas present and winter food !). . I ll let you know how the lemon diffusers oil works out!! 😍😍. .
