Today must be turkey curry day! As my boys are dairy-free, I have to be mindful of curries, but today I’ve cooked a most delicious dairy-free curry using the Christmas left-overs. I’ve stripped the turkey carcass and cooked it with 4 chopped onions, 4 cloves of garlic, 4 heaped tablespoons of curry powder in a generous glug of oil, 2 parsnips chopped into tiny pieces for 10 minutes. I then added 2 tins of coconut milk, 2 tins of chopped Tomatoes and one carton of passata and simmered with the lid on for 40 minutes. When I started to cook the rice, I chucked in a few handfuls of frozen peas.
