Indulge in the delightful combination of chocolate and mint with these Andes Mint Cookie Dough Truffles. These bite-sized treats feature a rich and minty cookie dough center surrounded by a smooth chocolate coating.
Ingredients: 1 cups chocolate cookie crumbs. cup sweetened condensed milk. teaspoon peppermint extract. cup mini chocolate chips. 12-15 Andes mint chocolates, unwrapped and chopped. 1 cup semi-sweet chocolate chips, melted. 1 teaspoon coconut oil. Crushed candy canes for garnish.
Instructions: Put the chocolate cookie crumbs, sweetened condensed milk, and peppermint extract in a bowl and mix them together. Mix everything together well. Drops of chocolate chips and chopped Andes mints should be mixed into the dough. Make truffle-sized balls out of the dough and put them on a tray lined with parchment paper. Put the truffle balls in the fridge for 20 to 30 minutes to make them firm. While the truffles are chilling, melt the coconut oil and semisweet chocolate chips in a bowl that can go in the microwave. Stir the mixture every 20 seconds until it is smooth and melted. Using a fork, dip each chilled truffle ball into the melted chocolate. Let the extra chocolate drip off. Put the truffles back on the baking sheet lined with parchment paper, and right away sprinkle crushed candy canes on top to decorate. Return the tray to the fridge and let the truffles set for another 20 to 30 minutes after coating all of them. If you wait until the chocolate coating sets, you can eat the truffles. Keep the truffles in the fridge in a container that won't let air in.
