Ingredients: 1 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup packed brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup mini chocolate chips. 1/2 cup chopped walnuts optional. 1/2 cup heavy cream. 1 cup powdered sugar. 1/2 teaspoon vanilla extract.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Mix the cocoa powder, baking soda, salt, and flour together in a bowl using a whisk. Put the softened butter, white sugar, and brown sugar in a different bowl and mix them together until they are smooth. Mix the egg and 1 teaspoon of vanilla extract into the butter and sugar until everything is well mixed together. Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined. If you want to add walnuts or mini chocolate chips, mix them in. Place tablespoon-sized chunks of dough about 2 inches apart on the baking sheet that has been prepared. After the oven is hot, bake the cookies for 10 to 12 minutes, or until they are set. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. Mix the powdered sugar, heavy cream, and 1/2 teaspoon of vanilla extract together until the mixture is thick and creamy. Once the cookies are completely cool, put a lot of the filling on the flat side of one cookie and then put another cookie on top of it to make a sandwich. Do this again with the rest of the cookies and filling. You can serve the whoopie pies right away or put them in the fridge for a short time to let the filling set.
